

A family favourite! Chicken pesto pasta with a variety of superfood vegetables: broccoli, asparagus and shitake mushrooms.
Ingredients
Directions
Prepare the pasta as per directions.
Add a drizzle of the olive oil to a pan, and place on low heat for 2 minutes
Add the chicken and stir fry for about 4-7 minutes or until the chicken is cooked.
Add the broccoli, asparagus, mushrooms and garlic and sauté for 3-5 minutes.
Add the pesto and mix well. Gently fry for another 3-5 minutes
Add the cooked pasta to your pan and mix well, making sure that the pasta, chicken and vegetables are all coated well with the pesto mixture.
Serve with a sprinkle of parmesan and torn basil leaves. Grate fresh black pepper over the top.
